Lumpfish caviar consists of small, glossy roe with a firm texture and a distinctively salty, briny flavour. The pearls provide a gentle pop when eaten and add both flavour and visual appeal to a variety of dishes. Best served chilled, it pairs well with crackers, blinis, eggs, seafood, crème fraîche and light appetisers.
